Nontraditional Traditional Slovak Recipes by Silvia Pilková

The traditional Slovak cuisine offer not only sheep cheese dumplings, potato pancakes, sausages and sweet pancakes. Bean soup with prunes from Kysuce
250 g of dry beans
150 g of prunes
1.5 liters of water
250 g potatoes
40 g of lard
40 g all-purpose flour
1 onion
200 ml cream - sour cream

Soak the beans overnight prior to cooking. Then cook the beans in water in which they were soaked, then add the potatoes cut into cubes and cook together until tender. Mix the fat and flour to prepare the roux, add finely chopped onions, fry, pour in water, pour into the soup and season with salt and cook for about 10 minutes. Finally, add the sour cream and prunes into the soup. Soak the prunes in a cold water for 15 minutes before mixing in.

Christmas roasted tea form old Bratislava
1 kg of fruit / frozen or fresh: pears, apples, oranges, currants, plums
1200 g granulated sugar
2 oz rum
1 lemon
1 tea spoon of ground cinnamon
3 whole cloves
Cut fruit into pieces and put in a larger bowl, mix in sugar, rum, sliced lemon, cinnamon and cloves. Mix well, pour into a deep baking pan/casserole and place in a preheated oven at 200 C for 1 hour. Stir the mixture occasionally while baking until juices begin to run. After baking pour the mixture into jars, close the lid tightly and turn upside down for 10 minutes.To serve, pour 3 CL roasted tea / fruit mixture and juice and then pour in hot water. Let stand for a while and drink. It smells wonderful and tastes even better.
